Collard Tacos
1. Taco Shells
7 large collard leaves
Cut the center vein out of each leaf.
2. Taco Filling
2 cups walnuts
1 large carrot
1 medium tomato
1 clove garlic
1 slice onion
**Taco seasoning
Directions: Put all ingredients into food processor, pulse till mixed and crumbly.
3. Sunflower Cream
1 cup sunflower seeds
1 cup water
1 clove garlic
½ lemon, juiced
1 slice onion
Directions: Blend ingredients in blender till smooth, add more water if necessary.
4. Taco Seasoning
1 T. chili powder
1 ½ tsp. cumin
1 tsp. black pepper
½ tsp. sea salt
½ tsp. paprika
¼ tsp. onion powder
¼ tsp. garlic powder
¼ tsp. oregano
5. Assembly
Lay collard leaves on flat work surface
Spread sunflower cream on each leaf add a spoonful of taco filling
Add toppings
Wrap up & ENJOY!!!
