Spinach Artichoke Dip

Spinach Artichoke Dip

Whether for a gathering, or just to enjoy as a treat for yourself, this dip is a great choice that won’t add to the bodily puffiness!

Ingredients

  • 2 cups cottage cheese pureed
  • 1 cup Greek yogurt
  • 1 cup artichoke hearts in water
  • 1 cup frozen spinach
  • 1/2 tsp high quality sea salt (think Redmond’s Real Salt or Celtic Sea Salt)
  • 1/4 tsp black pepper
  • olive oil cooking spray

Instructions

  1. Preheat oven to 400°F.
  2. Spritz a small baking dish with cooking spray.
  3. Stir together all ingredients and pour into baking dish.
  4. Bake 20 minutes or until bubbly. Serve with vegetables or crackers.

Notes

1 serving = a 1/2 cup of vegetables + your choice of vegetables or daily allotment of crackers
