Sweet Potato Hummus

Hummus done the Southern way – with Sweet Potatoes
Ingredients:
- 1 lb. sweet potatoes
- 1 tbsp. tahini
- 1 tsp. cumin powder
- 1 clove garlic (or 1/4 tsp garlic powder, or to taste
- 1 large lemon, juiced
- 1/8 tsp black pepper
- Pinch of fresh or dried parsley (optional)
Directions:
- Bake sweet potato until fully cooked
- Allow potato to cool, then remove skin
- Add sweet potato and all other ingredients to food processor or blender
- Blend until smooth and creamy
- Adjust seasonings as desired
- Serve with veggies, pita bread, or chips
